Tonight I tried a new recipe. I love beets and this month in Vegetarian Times, there were multiple recipes that included them! It is a variation on cole slaw. It uses beets (I chose golden), green onions, green apple, and a homemade dressing. It's yummy! This is a picture of it after being loaded into containers for the week.
